blueberry goodness

blueberry pancakes


I made these Sunday night. It was a random spur of the mommentGOOD idea.



FOUND THIS RECIPE ON ALLRECIPES.COM AND IT TURNED OUT GREAT. I USED FRESH BLUEBERRIES AND SUBSTITUDED VEGETABLE OIL FOR THE BUTTER. ALSO, YOU DON'T HAVE TO WAIT AN HOUR LIKE IT SAYS.


INGREDIENTS

  • 1 1/4 CUPS ALL-PURPOSE FLOUR
  • 1/2 TEASPOON SALT
  • 1 TABLESPOON BAKING POWDER
  • 1 1/4 TEASPOONS WHITE SUGAR
  • 1 EGG
  • 1 CUP MILK
  • 1/2 TABLESPOON BUTTER, MELTED
  • 1/2 CUP FROZEN BLUEBERRIES, THAWED

DIRECTIONS

  1. In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Pecan Sandies



*1 C. butter (room temp)
*1/2 C. sugar
*2 tsp. water
*2 tsp. vanilla
*2 C. flour
*1 C. chopped pecans
*powdered sugar

Cream butter and sugar together. Add water and vanilla. Mix in flour and pecans.

Refrigerate for at least 3 hours, or over night.

Form balls and place on ungreased cookie sheet at least 2 inches apart. Bake at 325 degrees for 20 minutes. Dust with powdered sugar while still slightly warm.

Makes about 2 1/2 dozen.

Homemade Whole Wheat Pizza

Thanks Veronica for making me a contributor to this blog!  I've thought about doing a recipe blog before - since so many people do it, and it looks fun....  but I barely keep up with my own non-food blogging!  So this is perfect - I can just do recipe posts whenever!

Here is one that we do quite often in our home - homemade pizza!  It's way better than the fastfood version. And less expensive.



  • 1 1/2 cups warm water 
  • 1 tablespoon active dry yeast
  • 1 tablespoon olive oil
  • 1 tsp honey (or you could use sugar)
  • 1 teaspoon salt
  • 3 1/4 cups cups whole wheat flour (preferably whole wheat pastry flour, but either works fine)
  • Put the honey in the warm water. Sprinkle the yeast over the top, and let stand for about 10 minutes, until foamy.

    Stir the olive oil and salt into the yeast mixture, then pour it into a breadmachine and add the whole wheat flour.

    Select dough cycle or pizza dough cycle. (takes about 1 hour)

    Preheat the oven to 425. Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a nonstick sprayed pizza pan. 

    Cook dough for 8 minutes.

    Add toppings - we usually do tomato sauce, mozzarella cheese, whatever meat we have around, bell peppers and/or whatever other veggies we have. 

    Bake for about 10 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Apricot Brie Cups


1 pkg of refigerated pilsbury pie crust
8oz brie cheese
Apricot Preserves
2 oz sliced almonds

Take pie crust role out and cut with round cookie cutter and place cut outs in mold.
Take a small pice of brie about the size if a nickle and put it center of cut out pie crust.
Take a spoon full of apricot and put on top of brie.
Sprikle some almonds on top.

Bake 350' for 10 mins till golden on the crust and enjoy.

Lasagna

1lb sausage
1Tbsp. sugar
1 jar spagetti sauce
1 small can tomato sauce
1/3 lb. egg noodles (dry)
1 tub cottage cheese
3/4 lb. mozzarella cheese
basil

* Heat oven to 350 degrees
* Cook sausage w/ sugar on stove
* In saucepan heat spagetti and tomato sauce

* In oven-safe glass pan, layer bottom w/ half of sauce mix
* Sprinkle half of uncooked noodles on sauce
* Sprinkle half of sausage on noodles
* Layer top w/ half of cottage cheese
* Sprinkle layer w/ basil
* Layer top w/ half of mozzarella cheese
**Repeat

* Cook for 25 to 30 min. (serves 6)

Sopapilla Cheesecake

9x13 pan
2 pkgs of cresent rolls
2 pkgs of cream cheese (8 0z)
1 1/2 cups sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1 stick of melted butter

*Put 1 can of cresent rools i bottom of pan
*mix cream cheese, 1 cup sugar and vanilla
*put mixtkure on top of rolls in pan
*layer other rolls on top
*pour melted butter on top
*mix 1/2 cups sugar & cinnamon &sprinkle on top

Bake 350" For 30 min's and injoy I will soon add a pic

Banana Bread


- 2 C. flour
- 1 tsp. baking soda
- pinch of salt
- 1/2 tsp. cinnamon
- pinch of nutmeg
- 1/2 C. shortening
- 3/4 C. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 over-ripened bananas

Combine first five ingredients. In a separate bowl, beat together shortening, sugar, eggs, vanilla and bananas. Combine both mixtures just until moistened. Pour into greased loaf pan.

Bake in a 350* oven for 60-65 minutes, or until tooth pic comes out clean. Cool in pan for 15 minutes, then remove and serve.

Note: if loaf starts to brown too quickly, cover loosely with foil.


I am not usually a fan of bananas or banana bread for that matter, but this recipe has just the right amount. It's best fresh, but it also tastes great toasted with butter.
