- 2 C. flour
- 1 tsp. baking soda
- pinch of salt
- 1/2 tsp. cinnamon
- pinch of nutmeg
- 1/2 C. shortening
- 3/4 C. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 over-ripened bananas
Combine first five ingredients. In a separate bowl, beat together shortening, sugar, eggs, vanilla and bananas. Combine both mixtures just until moistened. Pour into greased loaf pan.
Bake in a 350* oven for 60-65 minutes, or until tooth pic comes out clean. Cool in pan for 15 minutes, then remove and serve.
Note: if loaf starts to brown too quickly, cover loosely with foil.
I am not usually a fan of bananas or banana bread for that matter, but this recipe has just the right amount. It's best fresh, but it also tastes great toasted with butter.
